Instant Upma Recipe: The Quick & Tasty South Indian Breakfast Fix

Ingredients

  • 1 cup roasted semolina (rava/sooji)

  • 1 tbsp ghee or oil

  • ½ tsp mustard seeds

  • 1 tsp urad dal (optional)

  • 1 tsp chana dal (optional)

  • 12 green chilies, chopped

  • 1 small onion, finely chopped

  • 1 sprig curry leaves

  • ½ tsp grated ginger

  • ¼ tsp turmeric powder

  • 2.5 cups hot water

  • Salt to taste

  • 1 tbsp chopped coriander leaves

  • 1 tbsp lemon juice (optional)

Instructions

Step 1: Tempering

  1. Heat ghee or oil in a pan.

  2. Add mustard seeds and let them splutter.

  3. Add urad dal and chana dal; sauté till golden.

  4. Add chopped green chilies, curry leaves, and ginger. Sauté for 30 seconds.

  5. Add onions and sauté until translucent.

Step 2: Add Rava

  1. Lower the flame and add the roasted rava.

  2. Mix well and sauté for a minute to coat it with the flavors.

Step 3: Add Water

  1. Pour in hot water slowly, stirring continuously to prevent lumps.

  2. Add salt and turmeric. Stir well.

Step 4: Cook

  1. Cover the pan and cook on low heat for 3–4 minutes.

  2. Stir occasionally until the water is absorbed and the upma becomes soft and fluffy.

Notes

  • Fluff gently with a fork.

  • Add chopped coriander and a squeeze of lemon juice.

  • Serve hot with coconut chutney or pickle.


Tips for Best Instant Upma

  • Use pre-roasted rava or roast it in advance and store for quick use.

  • Add veggies (carrot, peas) to make it more nutritious.

  • Adjust water depending on how soft or grainy you like your upma.
