Instant Upma Recipe (Araas Method)
Making instant upma is a breeze—no long prep or waiting needed. This guide shows you how to make a quick, healthy, and flavorful South Indian breakfast using semolina (rava), tempered spices, and hot water—step by step. Whether you’re using an Instant Pot or stovetop, these instructions ensure soft, non-sticky upma every time. Let’s get started!
Prepare Your Instant Pot Plug in your Instant Pot. Ensure the inner pot is clean and dry.
Sauté & Temper
- Press the “Sauté” button on your Instant Pot. Once it displays “Hot,” add 1 tablespoon of ghee or oil.
- Add the mustard seeds and let them splutter.
- Next, add the urad dal (if using) and sauté until it turns light golden brown.
- Add the asafoetida (hing), followed by the curry leaves, green chilies, and grated ginger. Sauté for about 30 seconds until fragrant. Be careful as curry leaves can splutter.
- Add the finely chopped onions. Sauté for 2-3 minutes, stirring occasionally, until they turn translucent. Do not brown them.
Add Rava & Water
If your rava is not pre-roasted:
- Add the unroasted rava to the Instant Pot. Stir continuously for 2-3 minutes on Sauté mode until it gives off a slightly nutty aroma and changes slightly in color (do not brown). Remove the rava to a bowl and proceed with tempering as above. (Alternatively, roast rava in a separate pan.)
If your rava is pre-roasted:
- Add 1 cup of roasted rava to the sautéed tempering ingredients. Stir well for about 30 seconds.
- Carefully pour in 2 cups of water. Add salt. Stir well to avoid lumps and make sure rava is fully submerged. Scrape down any bits stuck to the bottom of the pot.
Pressure Cook
- Cancel the “Sauté” mode.
- Secure the Instant Pot lid and set the steam release handle to “Sealing.”
- Press the “Pressure Cook” (or “Manual”) button and set the time to 2 minutes on High Pressure.
- The Instant Pot will take a few minutes to build pressure before cooking begins.
Quick Release (QR)
- Once the timer beeps, carefully move the steam release handle to “Venting” for Quick Release. Be cautious of the hot steam.
- Wait until the float valve drops before opening the lid.
Fluff & Serve
- Open the lid carefully. The upma should look set.
- Fluff it gently with a fork.
- Stir in lemon juice and chopped coriander leaves. Add roasted peanuts or cashews, if desired.
- Serve hot with a dollop of ghee.
Araas Pro Tips
Rava Roasting is Key: Roasting the rava (sooji) beforehand helps prevent stickiness and improves texture. If not pre-roasted, dry roast it before starting the recipe.
Water Ratio: Use a 1:2 rava to water ratio for moist, fluffy upma. For softer texture, add 1/4 cup more water.
Vegetable Additions: Add chopped veggies like carrots, peas, or beans after sautéing onions for extra nutrition.
Taste Test: Always taste and adjust salt and spices before serving.
Storage: Store leftover upma in an airtight container in the fridge for 2-3 days. Reheat with a splash of water or milk.
